Celery Root and Carrot Salad

Serves 10

 

2 cups celery root bulb, julienne (cut into long thin strips)

2 cups carrots, shredded

4 tablespoons green onions, chopped

2 tablespoons Italian parsley, minced

 

 

Dressing

 

¼ cup red wine vinegar

¼ cup rice vinegar

2 tablespoons Dijon mustard

1 cup yogurt

 

 

Prepare the dressing.  Add remaining ingredients and refrigerate.
