BBQ Sauce

 

Yield 1-½ quarts

 

1 oz ginger, peeled & diced

½ c garlic, chopped

4 oz apple juice concentrate

1 ½ jalepeno pepper, diced

1 c cider vinegar

4 oz Westbrae no salt added stone ground mustard

3 T Dijon mustard

3 # low sodium tomato puree

1 t black peppercorns, ground

2 t dry oregano

1 t liquid smoke

 

  1. In a large stockpot cook ginger, garlic, jalepeno, apple juice & vinegar. 
  2. Reduce until consistency of syrup.
  3. Add remaining ingredients.
  4. Bring to a boil & reduce heat.
  5. Simmer for 1 hour.
  6. Cool immediately

 

Nutritional: 1.5 oz:  20 cal, .6 prot, 4 carbs, 1.76 sugar,  22 sodium
