Chicken with Mushrooms & Peppers

 

 

Yield 4

Portion 4 oz

 

1 # boneless, skinless chicken breast

1 c Assorted Mushrooms

½ c shallot, sliced

2 c Diced Red & yellow Peppers

¼ c garlic, sliced

½ c red wine

2 T thyme

1 pinch crushed red pepper

2 large ripe tomatoes, diced

1 T basil

 

  1. Sear chicken with peppers & mushrooms, garlic, shallot & thyme.
  2. Flip add wine, crushed red pepper & tomatoes.
  3. Cook until chicken is done.  Add Basil.
  4. Serve Hot.
