Eight Bean Soup

Portion 8 oz

 

 

1 # assorted Beans, from following: split pea, yellow split pea, lentil, red, black, pigeon, navy, kidney, white, lima, green lentil ,crimson lentil.

1 yellow bell pepper, dice

1 green bell pepper, dice

1 red bell pepper, dice

¼ c garlic, chopped

¼ c shallots

1 red onion

¼ Bu cilantro

1 t liquid smoke

1 t chili Powder

½ gallons water

1 pint knudsen low sodium v-8

½ jar Enrico Salsa

1 t garlic powder

1 T oregano

¼ c balsamic vinegar

Soak Beans overnight.  Cook vegetables in a large stockpot until soft.  Add beans, water, oregano, chili powder, liquid smoke, garlic powder, salsa, vinegar & juice.  Cook for 2 ½ hours.  When ready to serve add cilantro.
