Garden Fresh Pan Roasted Chicken Breast

 

Yield 4

 

  1. chicken breasts 4-oz each

1     TBL rosemary, chopped

  1. pint grape tomatoes
  1. red onion, large dice
  1. zucchini, large dice
  1. TBS  garlic, sliced

½   cup orange juice

  1. TBS fresh basil, sliced

1    Tsp. black pepper

1    bunch asparagus

 

  1. In a large hot skillet place chicken breasts.
  2. Cook for 2 minute over medium high heat.
  3. Add orange juice, rosemary & all vegetables except asparagus. Cover and lower heat to medium low.
  4. Cook for 2 minutes. Flip Chicken.
  5. Add asparagus & pepper.
  6. Cook for 2 minutes. Add basil.
  7. Serve immediately.
