Grilled Artichokes

 

Yield 16

 

 

32 baby artichokes

1 cup vinegar

1 cup lemon juice

1 TBL dill

1 TBL parsley

1 TBL tarragon

1 TBL chives

1 tsp. black peppercorns, ground

 

  1. In a stockpot boil the artichokes with the vinegar until soft.  Cool in and ice water bath when stem is soft.
  2. In a bowl mix remaining ingredients.
  3. Cut artichokes in half and toss with herbs.
  4. Grill the artichokes on a very hot grill for 30 seconds on each side.
  5. Toss with herbs again and serve.
