8 red pepper, de-seeded & diced

1 cup canned tomato, low sodium

1 cup tomato puree

¼ c lemon juice

1 TBL cumin seed, toasted & ground

3 TBL garlic, minced

1 TBL coriander seed, toasted & ground

2 onions, peeled & diced

½ tsp. black peppercorns, ground

1 tsp. paprika

1 tsp. cayenne pepper or 1 jalepeno, diced

 

  1. In a hot stockpot sauté garlic & onion until light brown.
  2. Add remaining ingredients and lower heat.  Cook for 30 minutes stirring regularly
