Merry Berry Soufflé

 

Yield: 15

 

  1. Pound Silken Tofu

¼ C    Egg whites

¼ C    Splenda

2 C ea.       Strawberries, raspberries and blueberries (cleaned)

1 C    chopped pineapple

1 t     passion fruit extract

  1. Mango peeled and chopped

1 T    Rum (optional)

 

Procedure

 

  1. Combine all fruits and cook for 15 minutes with Splenda.
  2. In a food processor blend tofu and egg whites until smooth
  3. Fold in fruit mixture, rum and extract.
  4. Spray soufflé cups with Pam. Pour mixture in individual cups and bake for 25 minutes at 350 degrees.
  5. Let cool and remove from cup. Serve with fruit sauce garnish with a sprig of fresh mint. A wonderful, healthy treat that’s worth the effort.
