Paprika Salmon

Seared Paprika Salmon

 

Yield: 12    Portion: 4 oz. raw fish

 

3 lbs. salmon

1 TBL blackened seasoning, salt free

3 TBL paprika

2 large red tomatoes, shredded

2 TBL garlic

1 jalepeno pepper

2 TBL cilantro

2 TBL parsley

2 tbsp. toasted coriander, fresh ground

1-cup garbanzo beans

½ tsp. black pepper, fresh ground

2 lemons, juiced

 

Procedure:

  1. Crush peppers, garlic, herbs, and lemon juice to form a paste.
  2. Coat fish with blacken seasoning.
  3. In a hot skillet sear salmon.  When partially cooked add remaining ingredients.
  4. Cover and cook over low until salmon is cooked, about 8 minutes.
