Raita

 

Portions:  6, used as a condiment

 

1     Medium Tomato, diced

1 ½  cups Plain non-fat Yogurt

2     Tbsp.       Fresh, finely chopped Mint

¼      cup  Scallion or mild Onion

1     small Cucumber, peeled, seeded and diced

½     Tbsp.       Ground and toasted* Cumin

Pepper and Tabasco to taste

 

 

 

Procedure:       Combine all of the ingredients in a bowl. Chill at least

 ½ an hour before serving.

 

* Toasted Cumin: Place a small sauté pan over medium heat. Add ground cumin to dry pan and shake or stir the pan quickly. You will smell a mild smoky aroma. Remove the pan from heat and pour cumin into a dish to cool. Proceed with recipe. This whole process only takes 1 minute.
