Rasta Pasta Salad

 

Yield: 8

 

1 #      cooked penne pasta

  1. red pepper julienne
  1. yellow pepper julienne

1 C      julienne snow peas

  1. carrot julienne

1          red onion julienne

¼ C     scallion sliced on the bias

3 T       basil chiffonade

¼ C     white balsamic vinegar

2 T       tomato puree

2 T       F/F ricotta cheese

 

 

Procedure

 

  1. In a skillet sauté onion and carrot for 1 minute. Add peppers and toss and let cool
  2. mix together white balsamic, tomato puree and ricotta cheese
  3. Tossed pasta vegetable mixtures in dressing add snow peas, scallion and basil.
  4. Chill and serve
