Red Bean Soup

Yield 12 Portion 8 oz

 

1 # red beans

1 yellow bells peppers, dice

1 green bells peppers, dice

1 red bells peppers, dice

2 T garlic, chopped

2 T shallots

1 ½ red onion, peeled & diced

1 T cilantro

¼ t liquid smoke

1 t chili Powder

1 gallons water

1 Qts knudsen low sodium v-8

2 T No salt added Enrico's Salsa

1 t garlic powder

2 t oregano

1 T balsamic vinegar

Procedure:

Soak Beans overnight.  Cook vegetables in a large stockpot until soft.  Add beans, water, oregano, chili powder, liquid smoke, garlic powder, salsa, vinegar & juice.  Cook for 2 ½ hours.  When ready to serve add cilantro.
