Salad Dressing

Pritikin Standard Salad Dressings

 

 

Italian Dressing

1 red bell pepper, seeds removed

1 red onion

2 tablespoons fresh garlic

1 teaspoon celery seed

2 tablespoons dry oregano

1 green bell pepper, seeds removed

2 cups white balsamic vinegar

1 cup red vinegar

2 tablespoons dry basil

½ teaspoon black peppercorns,

½- cup Z-trim (a fat replacement made of corn fiber)

 

Mix all ingredients in a blender until combined well (about 3 to 4 minutes).

 

Berry Delight

½ c blackberry

½ c raspberry

½ c mango

½ c papaya

1 c white balsamic vinegar

½ cantaloupe

1 T apple juice concentrate

1 T garlic

1 t Dijon mustard

1 T cilantro

 

Blend until smooth.

 

 

Roasted Garlic Dressing

 

3 c fat free yogurt

½ c roasted garlic puree

2 t chopped garlic

½ c whole grain Dijon mustard

1 ½ c soy milk

 

Puree all ingredients until smooth.  Serve cold

 

 

Honey Mustard Dressing

2 oz Dijon mustard

4 oz Westbrae, no salt stone ground mustard

4 oz white vinegar

4 oz cold water

½ t granulated garlic

1 t dry oregano

2 T apple juice concentrate

2 T Z Trim

 

 

Blend all ingredients

 

 

Horseradish-Balsamic Vinaigrette

2 T horseradish

1 c balsamic vinegar

2 t Dijon mustard, low sodium

1 t Apple Juice Concentrate

½ t oregano

2 T Z Trim

 

  1. Mix all ingredients with a whisk.

 

 

House Dressing

 

¾ c fat free yogurt

½ c fat free sour cream

¾ c unsweetened ketchup, Westbrae

½ t dry oregano

½ t granulated garlic

½ c skim milk

 

Mix all ingredients in a large bowl until fully combined.
