Seared Salmon with Arugula, Mushrooms & Balsamic

 

Yield 4

Portion 4 oz

1 # salmon cut into 4 oz portions

½ t celery seed

2 juniper berries

¼ t basil

¼ t granulated onion

¼ t granulated garlic

¼ t chili powder

¼ t coriander, ground

¼ t black peppercorns, ground

1 T paprika

½ t thyme

1 # assorted Mushrooms

10 oz fresh arugula, sliced

4 T balsamic vinegar

 

  1. Toast and grind all the spices together.  Coat salmon in spice. 
  2. In a hot skillet brown salmon & mushrooms.
  3. Cover & turn heat to low, cook for 5 minutes
  4. Add arugula & balsamic.  Cover for 2 minutes more.
  5. Serve immediately
