1 c bulgur

1c hot water

6 lemon, juiced

2 t rice vinegar

1 t minced garlic

1 cup minced tomatoes

½ cup minced green onions

½ cup minced parsley

½ cup minced mint

1 t paprika

½ t black peppercorns, ground

 

Procedure:

 

  1. Soak bulgur in enough hot water to cover for 30 minutes.
  2. Combine all ingredients and chill well.
