The Cole Slaw

Vegetables:

1½ cups green cabbage, shredded

1½ cups red cabbage, shredded

1 cup carrots, shredded and rinsed

 

Dressing:

½ cup brown rice vinegar

1 tablespoon apple juice concentrate

1 tablespoon basil, chiffonade (cut in thin strips or shreds)

¼ cup ginger, peeled and minced

2 teaspoons garlic, peeled and minced

1 teaspoon dill, minced

1 teaspoon lomongrass, minced

1 teaspoon low-sodium Dijon mustard

 

1.  Mix dressing in a blender or food processor.

2.  Combine dressing with vegetables and let chill for one hour.
