Vegetable Fried Rice

 

Vegetable “Fried Rice”

Yield 16

4 cups cooked Brown Rice

1 onion, diced

1 cup shredded carrots

¼ cup shiitake mushrooms, sliced

1 red bell pepper, julienne

2 TBL garlic, chopped

1 tsp ginger powder

2 tsp sesame seeds

2 tsp sesame oil

1 TBL fresh ginger, diced

1 cup water

1 cup snow peas, julienne

1 cup baby bok choy, sliced

2 TBL fresh basil, sliced

½ cup egg whites

1 cup bean sprouts

 

  1. In a large hot skillet cook garlic, onions, fresh ginger, carrots & shiitake mushroom until garlic is brown.
  2. Add egg whites and cook for 1 minutes or until egg is cooked.
  3. Add remaining ingredients except basil & bean sprouts.
  4. Cook for 5 minutes or until very hot.
  5. Add basil & bean sprouts, cook for 1 minute more and serve.
