Blueberry Cheesecake


Yield 40     Portion ½ c


2-pound grainfield’s corn flakes

1 c apple juice concentrate

6 # cream cheese, fat-free

1 # cottage cheese

1 # fat-free yogurt

½ c splenda

3 T vanilla

3 c egg whites

2 pints blue berries



Grind corn flakes in cuisenart until fine, mix with apple juice and layer in bottom of baking sheet and bake for 3 minutes to set crust.

Mix cream cheese with yogurt & cottage cheese in cuisenart until very smooth.  In large bowl mix egg whites, splenda, blueberries & vanilla with spoon (not whisk).  Add cream cheese mixture and mix fully.

Bake at 375 degrees for 30 minutes.
