Chicken with Plum Sauces

4 chicken breasts 4oz. each
1/8 tsp. cinnamon
1/4 tsp. Granulated garlic
1/4 tsp. dried thyme
1/4 tsp. cayenne pepper
2 lemon zest & juice

6 plums, diced

1 jalepeno pepper, de-seeded
1 grapefruit zest & juice
2 tsp. minced ginger
4 small garlic sliced cloves
1/2-cup white wine
1/4-cup rice vinegar

2 tsp. corn starch mixed with cold water


  1. Mix dry spices together and coat chicken.
  2. In a hot skillet sear chicken breast and plums for 3 minutes.
  3. Flip chicken over and add remaining ingredients, except cornstarch, and cover.
  4. Lower heat and cook over low heat for 4 minutes.  Add cornstarch to thicken and bring to boil.
  5. Serve hot with brown jasmine or basmati rice.
