Halibut Romesco Style

Fish  Romesco Style


Yield 12

3 pounds fish, cut into 4 oz portions

3 Red peppers, large dice

1 Yellow pepper large dice

2 onions, large dice

20 cloves garlic, cut in large pieces

1 c white wine

1 c vegetable stock

¼ t black peppercorns, ground

½ t low sodium soy sauce

½ Bu Italian Parsley, picked & chopped



1.  In a large skillet, over medium heat, sauté fish.

  1. When browned add peppers, onion & garlic.  When onions are translucent add stock, soy sauce, black pepper & wine. 
  2. Cook until liquid is reduced by ½.
  3. Let halibut cook in the sauce for 3 minutes.
  4. Finish Sauce with parsley, Serve hot.
