Spinach Quiche

3 Pk     frozen spinach (de-frost and drain)

  1. onion diced

2 T       chopped garlic

2 T       Pritikin seasoning

1 t        chopped fresh thyme leaves

  1. carrot finely diced
  2. ¼ t      ground black pepper

½ ea.   red and yellow pepper dice small

1 C      egg white





  1. sauté garlic, onion and carrot until glossy
  2. Add spinach, thyme, pepper and seasoning. Cook until spinach is hot throughout.
  3. add diced bell pepper and cool
  4. add egg white and pour onto a lined half cookie sheet or half hotel pan and bake 25 minutes at 350 degrees or until firm
