Strawberry Mousse


Serves 10


2 lb extra firm silken tofu

2 cups strawberry puree

2 tablespoon vanilla extract

¼ cup Splenda

¼ tsp ginger juice

Garnish:  4 raspberries


1.  Puree tofu in food processor until very smooth. 

2.  Add remaining ingredients.  Puree until thoroughly combined and fluffy. 

3.  Put into serving glasses.

4.  Garnish each serving with a raspberry.
