Banana Cake


Yield: 18


5 #    Ripe bananas

3C     Splenda

3C     Z-trim

4 oz vanilla extract

1 T    ground cinnamon

1 oz   baking soda (optional)

1 T    ground nutmeg

3 #    whole-wheat flour

1C     skim milk

3 C    egg white




  1. mix banana, Splenda and spices together
  2. sift flour and add to mixture, mixing for one minute
  3. Add milk and lightly whipped egg whites mixing for another two minutes.
  4. Pour into lined cake or loaf tin and bake at 350 degrees for 20 minutes, reduce temperature to 300 degrees and bake for another 20 minutes.
  5. Cool and serve
