Italian-Inspired Zucchini Noodles with Tomato Sauce


2 large zucchini, spiralized or cut into thin strips
2 cloves garlic, minced
1 can (14 ounces) diced tomatoes
2 tablespoons tomato paste
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon red pepper flakes (adjust according to taste)
Salt and pepper to taste
Fresh basil leaves for garnish


In a large pan, heat a tablespoon of olive oil over medium heat.
Add the minced garlic and sauté for a minute until fragrant.
Add the diced tomatoes, tomato paste, dried basil, dried oregano, red pepper flakes, salt, and pepper. Stir well to combine.
Simmer the tomato sauce for about 10-15 minutes, allowing the flavors to meld together.
Add the zucchini noodles to the pan and cook for 2-3 minutes, just until they are tender but still have a slight crunch.
Remove from heat and garnish with fresh basil leaves before serving.
