Japanese-Inspired Miso Soup

 Japanese-Inspired Miso Soup

Ingredients:

4 cups vegetable broth
2 tablespoons miso paste
1 cup cubed tofu
1 cup sliced mushrooms
1 cup chopped spinach
2 green onions, chopped
1 teaspoon grated ginger
1 tablespoon soy sauce or tamari
1 tablespoon rice vinegar
Optional toppings: seaweed flakes, sesame seeds

Instructions:


In a large pot, bring the vegetable broth to a simmer.
In a small bowl, dissolve the miso paste in a few tablespoons of hot broth until smooth.
Add the miso mixture, tofu, mushrooms, chopped spinach, green onions, and grated ginger to the pot.
Simmer for about 5-7 minutes, or until the tofu is heated through and the vegetables are tender.
Stir in the soy sauce or tamari and rice vinegar.
Serve the Japanese-inspired miso soup hot, topped with seaweed flakes and sesame seeds if desired.
