Mediterranean-Inspired Quinoa Salad


1 cup cooked quinoa
1 cup cherry tomatoes, halved
1 cucumber, diced
1/4 cup chopped Kalamata olives
1/4 cup crumbled feta cheese (in moderation)
2 tablespoons extra-virgin olive oil
1 tablespoon lemon juice
2 tablespoons chopped fresh parsley
1 tablespoon chopped fresh mint
Salt and pepper to taste


In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, Kalamata olives, and crumbled feta cheese.
In a small bowl, whisk together the olive oil, lemon juice, parsley, mint, salt, and pepper.
Pour the dressing over the quinoa mixture and toss to coat all the ingredients.
Serve the Mediterranean-inspired quinoa salad chilled or at room temperature.
